“There has to be equal pay. It’s a biased industry; this has motivated me to open a space and be a forward mover - to do something different. After speaking about my experiences at the last training, I felt like everyone could relate; watching the computer screen while I was talking, everyone was nodding their head.

Hearing how my story happens across the board all over the country was crazy eye-opening for me. Unjust practices are so common and normalized, it’s going to take all of us to change that."

We continue our celebration of #BlackHistoryMonth We continue our celebration of #BlackHistoryMonth with a look into the life and legacy of Civil Rights Icon and Queen of Creole Cuisine Leah Chase 👩🏾‍🍳✨

Born in a small Louisiana town in 1923, Leah Chase grew up at the height of the Jim Crow era. After marrying jazz trumpeter Dooky Chase in 1945, the pair worked together to expand his parents’ sandwich shop and lottery business into the eponymous fine-dining restaurant where her meals would alter the course of American history. 

Dooky Chase’s Restaurant became the very first upscale restaurant where African Americans could gather in segregated New Orleans. She earned recognition as a Civil Rights trailblazer and continued feeding all who entered her restaurant including musicians, luminaries and world leaders. 

Now, Leah Chase’s lifetime achievements continue to inspire generations of Black culinary professionals to wield their ancestral food as a vessel for creating their own narratives of power, resistance and justice. 🖤✨✊

"I feel strongly that if you’re interested in hiring people who are formerly incarcerated, there’s a stigma about hiring people who've only committed lower offenses. I don’t believe in that. We had the most success with people who had people with a very long sentence; they had a different level of work ethic and dedication.
